Another Thanksgiving Hit, Oh My! The List is Growing!

This cake is so easy; the ingredients are a cup of this and a one half cup of that, beat it up and pour it in the pan. Well, you do have to knead it a bit, but don't be scared. I'm promising it's simple!

I like to make this when I'm energetic or nervous, it always calms me down! And, yes, it's a cake my Aunt Lady and Aunt Cally beat and banged together by adding fruit of their choice on the top, and sliced bananas in the cake, (I suggested bananas on top, here) so it does resemble a banana split but I'm not responsible if you add ice cream!! Here comes the heart attack!

Feel free to smash the bananas if you prefer, again this is a cake you can get creative with. So knock yourself out!

Just to warn you, this cake can get "heavy" quick, so, be careful with handling the dough, it will get tough if you do it too much!

Gather these ingredients:

  • 1 c quick oats, uncooked (duh!)
  • 1 c flour
  • 1/4 c white sugar
  • 1 tblsp grated orange peel (or lemon!)
  • 1/2 tblsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt (optional but it really does taste better with it)
  • 1/4 c butter, ice cold! (always choose unsalted, so you control the salt!)
  • 1 2/3 c plain yogurt SECRET INGREDIENT, divide it: 1 cup; 2/3 cup
  • 1 banana sliced; drizzle it with lemon juice lightly to keep it white
  • 1/2 c fresh fruit: raspberries, blueberries, strawberries, your choice
  • Dash cinnamon

Procedure:

  1. Prepare round cake pan: spray with cooking spray
  2. Stir together oats flour, sugar, orange peel, baking powder, baking soda and salt.
  3. With pastry blender, cut in the very cold butter until mixture is coarsley blended. The cold butter will make this cake light and ftender!
  4. Add 2/3 c of the yogurt, mix until ingredients are moist.
  5. Turn the dough out onto a lightly floured surface and knead it gently about 10 times. See? Easy!
  6. Pat into the cake pan,
  7. Bake for about 20 minutes, until light brown.
  8. Cool slightly. Add the topping of fruit, and a teaspoon or two of yogurt! Sprinkle with cinnamon, or even use whipped topping or powdered sugar.
