Holidays Are Tough Enough, So How About Some Easy Cooking?

I'm all about easy cooking, and a sucker for gentle. These blueberry cornmeal griddle cakes are so smooth and easy on the tongue you'll wonder why you didn't think of this yourself. Or maybe you have?  Cornmeal cakes are as old as the farm and deserve to be on the holiday morning menu!

I tend to think my grandmother and aunts were the only ones who knew how to cook. Now THAT would make them proud, because they thought there were the best, too!

Who cares, their food was gobbled up like the hungry turkeys we all were. Cornmeal griddle cakes are chewier than pancakes, and for me, tastier. The hearty flavor is satisfying in a stick to your rib style that compliments winter and the holidays.

My farm uncle never knew idle time. His tall, slim stature didn't fit with a "never am full" appetite, but he ate everything in front of him, daily grunting his approval of the meal as he winked his way out the door in the mornings. The cows were calling him for their breakfast, and he respected that.

Now, when I visited, I was close at his heels, even if it meant grabbing a griddle cake to go on my trek to the barn or hay truck. Most of the time Uncle Finley didn't let me go, but he knew I'd tag along behind and he feared for my safety, since I was ignorant of farm animals, snakes, and bull needles. So, often he'd give a slight nod and up in the truck I'd jump. I'd wear pigtails just to fit in, hoping that looking the part would be more persuasive.

These cornmeal griddle cakes are good with apples, or pears, or any other fruit you like, even bananas. My favorite is, of course, the famous and oh, so healthy, blueberry! They are so simple, it's perfect for new cooks, or busy ones.

Ingredients:

  • 2 cups Corn meal
  • 2 tbsp sugar (optional, tho the cornmeal kinda of "calls" for something sweet and blueberries aren't)
  • 1 tsp vanilla, pure is best
  • dash salt, to 1/2 tsp
  • 1 1/2 tsp baking powder
  • slightly less than 1/4 c canola oil (my substitute for the vegetable or corn oil)
  • 2 egg whites (save the yolks for your shampoo!)
  • 1 1/2 cups milk, or buttermilk, to consistency (not too thin or thick!)
  • 1 1/2 cups blueberries to taste (not too many, you want to be able to have some "cake" to the griddle cake)

Procedure:

  1. Add all dry ingredients in a bowl and mix well.
  2. In separate bowl, whisk all wet ingredients until well blended.
  3. Lightly mix together dry and wet, until blended, but do not beat. Fold in blueberries and then dip by a scoop onto a sprayed griddle.
  4. When bubbles appear on surface of griddle cake, turn cake. It's done when fluffy and lightly browned.

Yield is about 12 cakes, or more if smaller. Serve with your favorite syrup, but I used really good quality jams and butter.

Tip: The vanilla flavoring is classic and goes well with the cornmeal, but experiment with almond, pecan, etc.

How About Some Flavored Butter?

  • 1 stick of softened butter
  • By The Tablespoon, Your Favorite Juice: Orange, Orange/Pineapple, Apple, cranberry?
  • Add a flavored syrup: maple, blueberry, strawberry?
  • Lemon Zest or Orange Zest or even Lime? You say how much.
  • Dash of Sea Salt

Mix well, and enjoy a bite of heaven!

Hi Scribenet, when I was growing up watching my aunts in the kitchen, I loved their food stories and try to recreate a bit of that as I cook now. It was so comforting to me...I could see their relatives as they described the aprons, wood stove, and yummy smells. It was hard work then, and even tho we have so many gadgets, I think cooking is still "hard." LOL
